Unfortunately, there is no such an option in Teams Assignment to hide the due assignments.
All we can do is to add a category/tag for the assignment. And use the filter to choose which assignments do you want to see.
It is also recommended to use the tags to organize your assignments.

Alex,
Yes, thanks. It's not a great solution, but it's better than seeing ALL assignments, past & future, every time I want to check assignments.

When you create your assignment (and even if you have already created one or more) you will see a small tag icon and the words “Add category” just under the Title box.
Hope this helps!
I agree that might be not the best user experience to filter the past due assignments. Thus, I would suggest you submit your feedback for Teams in the website below:

@PurpleBekka, as Julie suggested, when you are creating an assignment, you should able to see Add category button below the Title box. Just click on it, and you should be able to add the tag for this assignment.

Hi PurpleBekka,
Yes, you are required to give your students' assignment a score and return all the works to your students, and you will see this green check mark behind the student's name.
After all the students has this green check mark, your assignment will be move to the graded section.
The Return function is not for those incomplete work. When you give your student's work a score, you have to return the work to them, and they will be able to see the score on their side. The student could modify their work based on your feedback and turn in again the assignment to achieve a higher score. Hope this could help you solve your current concern.
